The story begins with Ed Irving, who started creating his original Italian ice recipes in 1971. At the time, Irving and business partner Bob Greenburg traveled around Tucson in a truck, serving frozen treats at schools, sports games, and concerts. The pair named their early creations after the "E" in Ed's name and the "G" in Greenburg's. Those creations later became known as Eegee's, a business the partners ran together until selling it in 2006.

Irving returned to the work of making Italian ice when he founded Slice & Ice in 2020. The restaurant continues to use many of his original recipes, which the business describes as all-natural and full of flavor. The ice is made with real fruit and no artificial dyes or flavors, and the menu includes 32 flavors.
